So here it is...the "revamped" Thanksgiving Menu. I have included Fruit, lots of vegetables, grains/breads, Meat and Dairy. Hopefully it is "balanced" and wholesome. Let it be known that "Moderation" is key with my menu. If you want to feel good about the whole experience, go for a walk after eating.
Appetizers: Red Pepper Humus with Whole Wheat Pita "chips"
Spinach Dip (Low fat version) and Celery sticks
Cheese Tray: Havarti w/Dill, Sharp Cheddar, Gouda and Goat Cheeses
My favorite Nut Bowl with a Nut Cracker....working for the nut meat burns calories! (right?)
Drinks: WATER, Unsweetened Tea, Hot Apple Cider w/ mulling spice, Saluda Grade Coffee (from N.C.), San Sebastian Winery Red and White Table Wines.
Dinner: Brock's Smoke Hut Smoked Turkey - 20 pounds
Cornbread Dressing made with giblets, onions, celery, eggs and chicken broth(fat removed)
Giblet gravy (also made with chicken broth-fat removed)
Baked whole Sweet Potatos w/ real butter on the side
Steamed Asparagus
Ambrosia Salad - grapefruit, navel oranges, pecans and coconut (delicious!)
Home made whole wheat yeast rolls (yes my house will smell delicious!)
Dessert: (The ambrosia salad will be my dessert this year)
Pumpkin Souffle'
Carrot Cake
Traditional Pumpkin Pie
Real Apple Pie
I know this sounds like a lot of food, but I am having 15 people this year and want to offer a variety. Plus everyone brings something to share. For instance, my daughter Alli will be bringing the Carrot Cake because she knows Momma LOVES carrot cake. Since Nan Naw (Desi's Mom) is under the weather this year, she will be treated like a Queen and won't be cooking her favorite Cornbread dressing. So everyone will have to settle on my version which will be just a good.
I would love to hear some of your menus! Isn't it a wonderful time of year? By the way, if you know of a friend or friend of a friend who doesn't have family to share Thanksgiving with, invite them in to your home and share yours with them. It will be a Blessing to you all!
