Ingredients:

1 lb Red Potatoes, Small

1 tbsp Olive or Vegetable Oil

1/2 tsp Salt

1/8 tsp Pepper

2 tbsp Grated Parmesan Cheese

 

Directions:

Cut the potatoes into 1/4" thick slices; toss with oil.

Place in a single layer in a greased 13" x 9" x 2" baking pan.

Sprinkle with salt, pepper and Parmesan cheese.

Cover tightly with foil.

Bake at 350 degrees for 40 minutes or until tender.

Yield: 4 servings.

Tried this with Yukon gold potatoes, cut them into wedges with my new Pampered Chef veggie wedger, added some garlic powder and they were amazing!  I just LOVE potatoes!
